  • 1 3/4 cups all-purpose flour
  • 1 3/4 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder

  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
  2. Mix flour, sugar, cocoa, baking powder, and baking soda in a large bowl.
  3. Add eggs, buttermilk, oil, and vanilla; beat until well combined.
  4. Stir in boiling water (batter will be thin).
  5. Pour into pans and bake for 30–35 minutes or until a toothpick comes out clean.
  6. Cool and frost with fudge frosting.

Ingredients:

  • 150g digestive biscuits or graham crackers
  • 100g unsalted butter, melted
  • 500g cream cheese, softened
  • 600ml whipping cream
  • 2/3 cup caster sugar
  • 700g mango flesh (fresh or canned)
  • 5 tsp gelatin powder + ¾ cup cold water
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • Fresh mango & passionfruit (optional toppings)

Instructions:

  1. Crush biscuits into fine crumbs and mix with melted butter. Press into base of springform pan and chill.
  2. Bloom gelatin in cold water for 5 mins, then microwave until dissolved. Let cool slightly.
  3. Blend mango into smooth purée. Reserve ¾ cup for topping.
  4. In a large bowl, blend cream cheese, cream, sugar, vanilla, lemon juice, mango purée, and gelatin until smooth.
  5. Pour mixture over crust and refrigerate for 3+ hours until set.
  6. Mix reserved mango purée with gelatin and lemon juice. Pour over cheesecake and chill overnight.
  7. Top with whipped cream, mango cubes, and passionfruit pulp before serving.
